Ok so I get that you’re not suppose to have muffins and what not on Whole 30. The people who created Whole 30 want you to have a new relationship with your food blah blah blah. And they are right. BUT a whole month of me not eating Pizza Hut or chips and salsa = me having a brand new relationship wth my food.
So we needed a snack/breakfast option (I’ve had more eggs and dried fruit than I can stand at this moment) and my friend Robin sent me this recipe she uses and I tweaked it a little to make it Paleo/Whole 30-ish. Please realize I said “ish” we are changing out lifestyle here so we break a few of the rules once in a while to make this do-able for the long haul. These take no time at all to make and they are DELISH!
3 large ripe bananas, mashed
1/2 cup of raw honey
1/3 cup of coconut oil
1 teaspoon of baking powder
1 teaspoon baking powder
1/2 teaspoon of salt
1 tablespoon of cinnamon
1 1/2 cups of almond flour
Optional: add chocolate chips or nuts
My oldest daughter is allergic to nuts and I tried these with coconut flour so she could have them and it was a big bust. Coconut flour is VERY absorbent so the batter was really dry. Stick with almond flour. We plan on living Paleo-ish even after Whole 30, and I’ll be adding a few chocolate chips to my batter in about 6 days (but who’s counting lol).
Preheat oven to 375 degrees
Mash bananas ( I use a potato masher!)
Add raw honey, oil and egg.
Add rest of the dry ingredients
Bake at 375 degrees for 20 minutes, let cool 5 minutes before eating.
The next morning, I warmed one of these up and put some ghee on top of it…yessss maaaaaaam.
