This is one of my favorite Whole 30/Paleo lunch recipes. We pretty much always have these ingredients in the house, so I don’t have to think too hard about this one! All you need is:
2 cooked chicken tenderloins
Handful of red grapes
2 stalks of celery
1/2 an apple
3 tablespoons of mayo
small handful of walnuts (optional)
Prep Time: 7 minutes
1.Grab cooked chicken and chop to desired size. If I have one tip for thriving on Whole 30 it’s to buy an Instant Pot . It has SAVED MY LIFE at least 19874709 times. I always have cooked chicken in the fridge to make it easy to grab and chop, shred for tacos, throw on a salad, whatever. My Instant Pot makes making chicken a 20 minute ordeal instead of an hour ordeal! Aaaaaaand it does all the work for me! I always do some meal prep by making a batch of tenderloins at the beginning of the week. The kids also love cubed chicken for a quick snack. Ok, back to the directions.
2.Wash and chop your grapes, celery and apple.
3. Combine chicken, grapes, celery, apple and stir in mayo. Add walnuts if desired.
